Quick Tuna Salad

Ingredients

  •  1 5oz canned tuna (drained)
  •  1 tbsp mayo
  •  1/2 tbsp mustard
  •  Salt/pepper


Combine tuna, mayo, and mustard in a bowl and mix thoroughly. Add salt and pepper to taste. 

Great on toast, chips, crackers, or a bed of lettuce. 


Total time: 2 - 5 minutes


Other great additions are raisins, nuts, and pickles.

Sunday Tuna Pasta

 Ingredients

  • 1 5oz canned tuna (drained)
  • 1 16oz package of your favorite pasta
  • 1 15oz canned peas
  • 1/2 (16oz) jar of Alfredo Sauce

 

Directions

  • Step 1   Bring  a large pot of lightly salted water to a boil. Add pasta and cook for 8  to 10 minutes; drain and set aside.
      
  •   Step 2   In a large saucepan over medium heat, combine tuna, peas, Alfredo sauce, (if desired, flavor with garlic powder, oregano, and basil); mix well.
      
  •   Step 3   Cook until heated through and add cooked pasta; mix well. Adjust seasoning as needed; serve.

Tuna Fish Cakes

 Ingredients

 

  • 1 (12 ounce) can tuna, drained    
  •   ½ cup chopped scallions    
  •   ½ cup dry bread crumbs, or as needed    
  •   1 large egg    
  •   1 tablespoon Dijon mustard    
  •   1 teaspoon garlic powder    
  •   1 teaspoon Sriracha    
  •     salt and ground black pepper to taste    
  •   2 tablespoons olive oil, or as needed    

 

Directions

 

  • Step 1   Preheat the oven to 350 degrees F (175 degrees C).
      
  •   Step 2   Combine  tuna, scallions, bread crumbs, egg, mustard, garlic powder, Sriracha,  salt, and pepper in a bowl. Mix until the mixture sticks together.  Divide into 6 equal portions and shape into patties.
      
  •   Step 3   Heat  olive oil in a skillet over medium heat. Pan-fry the patties until  deeply browned and crispy, about 3 minutes on each side. Transfer to a  small baking tray.
      
  •   Step 4   Bake in the preheated oven until the center of the fish cakes are firm, 5 to 7 minutes.

Tuna Tacos

 Ingredients

 

 

  • 2 tablespoons vegetable oil    
  •   2 tablespoons butter  (Optional)   
  •   2 small tomatoes, diced    
  •   1 small onion, diced    
  •   ½ teaspoon crushed garlic    
  •   2 (5 ounce) cans tuna, drained    
  •   ½ teaspoon salt    
  •   ½ teaspoon ground cumin    
  •   2  eggs    
  •   2 tablespoons finely chopped fresh cilantro    
  •   8 (6 inch) corn tortillas, warmed    
  •   1 large avocado, thinly sliced    
  •   2  limes, cut into eighths    
  •   1 dash hot sauce, or to taste      

 

Directions

 

 

  • Step 1   Heat  oil and butter in a large pan over medium-high heat. Add tomatoes,  onion, and garlic. Saute until tomatoes release all their juices, about 3  minutes. Add tuna, salt, and cumin. Saute for 1 minute. Stir in eggs  and cilantro; cook until eggs are set, 3 to 5 minutes.
      
  •   Step 2   Spoon 3 tablespoons of the tuna mixture onto each corn tortilla. Top each with a slice of avocado, lime juice, and hot sauce.

Tuna Melt

 Ingredients

 

 

 

  • 2 5-ounce cans of tuna (ideally packed in oil) 
  • 1/4 cup mayonnaise 
  • 5 tablespoons extra virgin olive oil, divided 
  • 1 tablespoon caper juice 
  • 3 tablespoons red onion, finely chopped 
  • 3 tablespoons celery, finely chopped 
  • 1/4 cup parsley or dill, finely chopped 
  • 3 tablespoons capers rinsed and drained 
  • 4 slices bread 
  • 1/2 pound cheese (Cheddar is a classic choice, Manchego, or a blend of Manchego and Cheddar, is also a delicious as is Swiss cheese.)  

 

Directions

  •  Step 1    In a medium bowl, mix tuna with mayonnaise, 3 tablespoons extra-virgin  olive oil, caper juice, red onion, celery, and parsley or dill. Add salt  and pepper to taste. Set aside.     
  •   Step 2    In a small saucepan over medium-high, heat the remaining 2 tablespoons  of olive oil. Add the capers and cook, stirring or shaking occasionally,  until the capers are crisp about 4 minutes. There is a fine line  between a crispy caper and a burnt caper, so keep your eye on the pan  and use your nose as a guide  
  • Step 3  Lay out 4 slices of bread. Drizzle with olive oil or spread with mayonnaise.  
  • Step 4  Spread tuna evenly over each slice. Top each slice generously with cheese.  
  • Step 5  Place under the broiler, keeping an eye on the bread and rotating as  necessary, until the cheese is completely melted and browned slightly on  top.  
  • Step 6  Pull out of the oven and top with crispy capers before serving.
